Pour-Over Coffee Without a Scale: Can You Do It?
Short answer: yes. You can make perfectly drinkable pour-over coffee without a scale. People did it for decades before digital scales were $15 on Amazon, and they still do. The longer answer is that brewing pour-over coffee without a scale costs you something — and the trade-off only really makes sense in specific situations.

What a Scale Actually Does for You
Before the workaround, here's what you're giving up:
Precision. Pour-over is sensitive to ratio. A 1:15 brew tastes meaningfully different from a 1:17. The Specialty Coffee Association's brewing standards define a narrow extraction window for a reason — by weight, you can hit your target every time. By volume, you're guessing within a wider band.
Repeatability. If today's cup tastes great and tomorrow's tastes bitter, a scale lets you actually figure out why. Without one, you can't isolate variables — you don't know if you used more coffee, more water, or both.
Improvement. Brewing is iterative. Each cup teaches you something if you know what you put in. Volume measurements are too imprecise to be a teacher.
You can absolutely brew without one. You just give up the ability to dial things in deliberately.

For ground coffee:

- 1 cup (US, 8 fl oz) ≈ 240g
- 1 cup (metric, 250ml) ≈ 250g
Water-to-gram is the one easy bit — at room temperature, 1ml of water weighs 1g. The challenge is measuring 250ml accurately without proper kit. (For the curious, the NIST reference on water density is the source of that neat 1ml = 1g rule, near enough.)
Practical Recipes by Volume
One cup, 1:16 ratio:
- 2½ level tablespoons of medium-ground coffee
- Just over 1 cup (240ml) of water
Two cups, 1:16 ratio:
- 5 level tablespoons of coffee
- 2 cups (480ml) of water
Larger Chemex brew, 1:16 ratio:
- 7 level tablespoons of coffee
- 3 cups (720ml) of water
A small measuring cup with millilitre markings handles the water side. The coffee side is where most of the imprecision creeps in. Try to be consistent with how you scoop — same tablespoon, same level, same grinder setting — so even if your absolute amount is off, your relative amount stays the same between brews.
Use a Marked Mug as a Measuring Cup
A trick that works well: find a mug that holds your target water volume, and use it as your reference. Fill it from the kettle to a marked line, and that's your water. This skips the measuring cup step entirely.
Most coffee mugs hold 350–400ml. A larger mug holds 500ml. Once you know the volume of your kettle pour and the volume of your mug, you can brew the same recipe day after day without measuring anything.
The Minimum Acceptable Setup
If you're going to brew pour-over without a scale, here's the bare-minimum kit:
- A consistent measuring spoon (preferably a coffee scoop with a known capacity, like 10g)
- A measuring cup with millilitre markings for the water
- A timer (your phone works)
- A burr grinder — this is more important than the scale. Inconsistent grind size will wreck a cup faster than an imprecise ratio.
Notice what's still on the list: a grinder. You can skip the scale; you cannot skip the grinder. A blade grinder produces wildly uneven particle sizes, and no amount of careful measurement will save the cup if the grounds are part dust and part chunks.
Why a Scale Pays for Itself Quickly
A reasonable digital coffee scale costs $15–$25. It will outlast every other piece of brewing gear you own. It pays for itself in two specific ways:
Coffee waste. A scale stops you over- or under-scooping. Over a year of daily brewing, even a small over-scoop adds up to a noticeable amount of wasted coffee.
