The coffee:
This selection from Mario Villano in Inispata is a standout expression of Amaybamba’s terroir—sweet, balanced, and full of character.
Mario’s farm is perched just outside Amaybamba, in the small hamlet of Inispata. Natural springs and a nearby forest preserve create a unique microclimate—cool, shaded, and rich in biodiversity. These conditions, along with Mario’s careful cultivation, result in some of the most memorable coffees we roast.
This is a classic washed Bourbon—an increasingly rare variety known for its dense sweetness and ripe fruit character. After sorting and depulping, the coffee is fermented for 48 hours, washed, and then dried slowly on raised beds. Grown at over 2,000 meters in rich Andean soil, this coffee is vibrant, clean, and deeply satisfying—a true taste of place.
