Green Coffee Grading: How Beans Are Assessed Before Roasting
Before coffee is roasted, it's evaluated as a raw material. Green coffee grading is the process of assessing unroasted beans for physical quality — defects, screen size, density, moisture content, and appearance — and assigning a grade that determines whether the lot qualifies as specialty, premium commercial, or commodity. Full black beans result from over-fermentation or significant disease damage during processing. They taste fermented, harsh, and sometimes rotten in the cup — a small number of full blacks can ruin an otherwise clean lot.
Sour beans result from improper fermentation, usually because the coffee was held in cherry too long before processing. They produce a sharp, vinegary off-flavor distinct from the bright clean acidity specialty coffees should have.
Dried pods and husks are pieces of the cherry that weren't fully removed during processing. They impart a dusty, paper-like taste.
Insect damage (specifically from coffee borer beetles) creates cavities in the bean that develop off-flavors during roasting.

Screen Size and Density

High-grown specialty lots often screen at 15–18, with many origins selecting for consistent screen size to improve roast evenness. Density reflects altitude and growing conditions. Beans grown at high altitude in cool temperatures develop more slowly, producing denser physical structure. Origin Grading Systems

Ethiopia grades washed coffees by grade number: Grade 1 is the best (fewest defects), through Grade 5 for commodity. What Green Grading Doesn't Tell You
Green grading is a physical quality gate, not a flavor prediction. A lot that passes specialty green grading — fewer than five Category 2 defects, zero Category 1 — has eliminated the most obvious sources of cup defects. But it doesn't tell you:
Varietal identity. Whether the lot is Gesha, Pink Bourbon, Bourbon, or a mixed varietal blend requires documentation at the farm or cooperative level — not visible in the bean itself.
Processing method. Washed, natural, honey, anaerobic — these profoundly affect cup flavor and aren't identifiable from green grading.
Farm practices. Altitude, fertilization, picking selectivity, drying care — all affect cup quality, none visible in the finished green bean.
Flavor potential. The actual flavor profile — acidity, sweetness, complexity — is only measurable in the cup. This is why green grading is always paired with cup evaluation for specialty purchasing. A lot passes grading, then gets cupped. Both inputs matter.
How Green Grading Connects to What's in Your Cup
