This is a taint that affects a small percentage of Great Lakes coffee lots and produces an unmistakable raw potato flavor in the cup: sharp, starchy, and entirely unpleasant. It does not affect all beans in a lot, but a single affected bean in a grind can ruin a cup.

The potato defect is caused by a bacterial infection (Erwinia carotovora) introduced through damage from the Antestia bug, which bores into coffee cherries. The bacteria convert compounds in the bean into pyrazines — the same chemical family that gives raw potato its characteristic smell.
