The coffee:

Juliana & Wbeimar are a husband & wife couple that produce incredible coffees at high elevations in Huila, Colombia. This lot of Pink Bourbon sits at a towering 1950 MASL and is hand-picked by their permanent labor force whom are calibrated with each cultivar's unique ripening patterns - an extra layer of attention that is not always possible for every farm.

Once picked, the cherry undergoes a short but impactful "pre-fermentation" or "maceration" which is just enough extra processing to exaggerate this coffees most dynamic qualities.
